Sauvignon Blanc 2006
Mild spring weather resulted in early budburst so that the vines got away to a good start. There followed a hot summer and a warm, dry autumn resulting in the grapes maturing in advance of normal. In spite of this we left the fruit hanging on the vine in order to encourage the development of ripe tropical fruit flavours and give the wine extra richness and depth.
After picking, the grapes were gently pressed and the juice fermented at low temperatures to help retain the zesty aromas and flavours which are so typical of the variety.
The bouquet and flavour are a heady mix of passion-fruit, mango, pawpaw and tropical spices underpinned with a hint of freshly crushed herbs. The extra ripeness has added an additional degree of richness and concentration. The wine has a crisp, dry finish, ensuring it is not only an excellent aperitif wine, but that it will enhance a wide variety of foods.
